Vinification
After the soft pressing of the grapes, harvested by hand in crates, the must remains in contact with the skins for 24 hours at 5 ° C, favouring the dissolution of the varietal aromas. The fermentation in autoclave leads to the evolution of carbon dioxide that remains incorporated in the mass, producing the typical perlage at the stage of refermentation, which lasts about 60-85 days. During this period secondary aromas attributable to yeasts work develop. Afterwards there is the tartaric stabilization refrigerating it at low temperature and then the isobaric bottling takes place.
Ageing
In stainless steel tanks.
Organoleptic Qualities
Sight - Pale straw yellow with bright reflections. Fine-grained and persistent perlage.
Smell - intense and persistent bouquet, balsamic fragrance of sage and thyme, well-combined with acacia and broom floral scents, clear scent of bread crust.
Taste – fresh and full, with excellent minerality, and rich acid structure. The liveliness and the fragrance enhance the persistence. The olfactory sensations confirm the organoleptic properties.

Pairings suggestions
Perfect as aperitif, ideal with Mediterranean cuisine typical fish-based dishes. It is also excellent with oysters, parmesan, cheese of medium and long aging, excellent end of meal with strawberries.
